My favorite course is Delivering Guest Service Practicum, which apply the theory learned from Food & Beverage Service Standard into practical section. This course focus on practical experience as server in Tiros Restaurant and Graduate Restaurant, both are trainee restaurants of ICHM. For the 4-days session of Tiros, it's A La Carte style restaurant for lunch, which mainly cultivates our Order-taking skill and Teamwork. We started from table setup, briefing of routine, job allocation and so on so forth, we operated like a real restaurant. During the course, we cooperate with our classmates to learn how and know how an A La Carte service gonna be like. In the term of 2-days Graduate Restaurant, it's a Fine-dinning style for dinner. This section is different to Tiros one because we might have opportunity of hosting Event within this period. For my practical in Graduate, it develop my wine knowledge a lot. I had much more opportunities of serving alcohol for guests, which more approaching the reality. I believed that not just in the future but also in following six-month placement will engage lots of wine service in Food & Beverage environment. Knowledge of alcohol not just about variety, pronunciation, color, flavor and texture above all include in knowledge of alcohol. Alcohol be considered as a necessary role for dinning in Australia, which could raise dinning to higher level but could ruin the whole meal either. I believed that I still have a big room improve for this. The second difference would be interaction with guests. Much more intensive interaction with guests, but I thought that's also the result of being confident with serving after Tiros session. Not just about serving and be served, also going further interaction with guests which also viewed as part of service by me. Tried to engage myself more once the guests invite me to their conversation.(308字)

RIH (Regency International House) is the mainly on-campus accommodation for ICHM students. RIH is quite convenient which includes almost living functions, three-meal included, laundry and spacious single room all belong to you as long as you pay 8700 A$/semester. However, meal supply by them barely fit my Taiwanese stomach. For the ICHM campus, even though we share with Le Corden Bleu and Tafe SA, it still have a diversified and sufficient resource for ICHM students. Such as Bar, Trainee Restaurant, Kitchen, and Coffee-Making would be available for you once you are part of ICHM. Be frankly, even though the tuition higher than normal university of SA, the resource still worthy such a high price. Unfortunately, ICHM locates on suburb of Adelaide, which takes 20-25 minutes to city by bus, and most of stores would shut down by 6 PM. That's the reason somehow boring in night time. "Summer and winter in one day" would be the best description for Adelaide climate, could be 30'c in day time and drop 15'c in night time, hence hang out with jacket would be necessary especially for the period of season change. Last but not least, there is a China Town locating in city, which would be ideal place when missing Taiwanese food. A variety of delicious food available for you, so you don't need to worry about getting starving in Adelaide. As a foodie, I always hang out for food with friends, I still get lots of haven't taste yet even though I went out for food every 2 day. To sum up, Adelaide still have basic living function to survive, but just take longer time and way to get what you want.(278字)

First problem must be language. As someone new for a group, Jargon would be a challenging part for him. Jargon is used for indicating certain kind of things or items, it could communicate more efficiently in group, but outsider or new comer might not really get the meaning of jargon. Such as plenty (housekeeping preparation area), or Hot SOS (communication channel among different department). Therefore, better to explain the meaning of jargon or use plain English when teaching for newcomer of group. Second would be dining habit. Noodle, salad, bread are main food for Australia, that's why they barely have rice with meal. As Taiwanese, I am struggling with the food here because I don't get used to it. I must get staving if working a lot. Therefore, I decided to handle the meal on my own. Learn and research online for both recipe and video of cooking procedure, and cook it. Eventually, I am able to handle some good Taiwanese cuisines , then I won't get sick of the food in Australia. Last but not the least is living cost. In last six month, I need to handle the living cost and making money on my own. Hence, financial management matters in this period. In the beginning, I didn't roster enough for my placement, therefore, I got a second job to support myself. After my hour of placement getting steady, I still need to schedule my two jobs won't clash with each other. So my working time of second have to arrange on my off day of placement.(258字)

(五)大三出國建議

Personal reflection of placement in first 5 weeks: (Room Service of Park Hyatt Melbourne) I give myself 6 out of 10. As I mentioned before, setting up is the key of Room Server. Compared to Banquet or Restaurant, these two focuses on taking care of guests, but Room Service focuses on set up more instead. For set-up session, we have two steps. First, read the docket of order, and then set the table. For the dockets, that’s the most struggling part for me in the beginning, there are few reasons I explain below. First, complicated docket reading. Dockets for Kitchen and the one for Room Service printed are the same. Therefore, I am very confused about which one should be prepared by our Room Service, such as some guests request extra cheese and jam for their toasts, for the cheese would be prepared by chef and extra jam would be provided by us. If time spare, I can double check with my colleagues, but I would handle by myself in busy hours. Second, extra items for order. Such as tomato and mustard sauce would be served when order includes chips (we have 3 different kind of chip: French fries, Crinkle cut, and Hand cut potato), sandwiches and burger. Or side cheese for spaghetti, side dressing for certain kinds of cuisines. These requests they wouldn’t show up dockets, therefore, learning base on experiences of setting or do confirmation with chef might be best way to serving right stuff for order. Last, coffee making. We also make coffee if guests order. However, I haven’t invested much time on learning coffee, that’s why coffee-making still be my difficulty so far. As proverb goes, “every mistake is a lesson”. There’s no shortcut for learning, it not just accumulation of time but also experiences as well. In following days, I still have 4 scores to improve, such as coffee-making, stock management so on so forth. Always get ready to learn something new.(327字)
