2018大三出國輔導通報系統 - 留學心得報告[編輯]

Studied in William Angliss Institute, Melbourne for junior study abroad program. Enrolled in Culinary Management focusing on food and service knowledge from July 2018 to November 2018. Enrolled to work integrated learning program for the rest of the stay.(37字)

My most favorite course while studying in William Angliss Institute is Cookery and Recipes. It is known by its name that the course provides practical learning. We had two chefs for the course, chef Krishna did the most practical sessions for the course and chef Oliver for academic lessons and grading our assessments. Both chefs did fantastic job providing professional knowledge in terms of food and beverage service. The reason I like the course is not only because it involves practical education, but also combines with academic knowledge that allows the students to develop critical thinking while preparing a dish. It was well said from both chefs that "a chef is not a chef if he can only follow instructions from the recipe." Indeed, everyone can follow a recipe at home and make up a dish and call themselves a chef, but the true meaning of a chef is knowing the technics of cookery, the background of an ingredient, the ability of adjusting and modifying recipes, or even knowing how a commercial kitchen operates can be enough to distinguish a professional chef or just some amateur chef who think they are good at cooking. The class is even more interesting when the chef told us one of our assessments will be testing our cooking abilities, also evaluate our hygiene, workflow and choosing the ingredients. We will need to prepare three dishes for the chef, Entrée, Main and Dessert in a limit of time. The session will be considered a formal ordering scenario, meaning students must bring uniforms and chef tools to the kitchen or else they are not allowed to take the test. At the last assessment we were told to come up with a recipe ourselves and we will receive another recipe from a classmate and prepare that dish. It tests us if we could make a professional recipe and evaluate the recipe from others before doing it and see what adjustments can be done. (327字)

William Angliss Institute Melbourne Campus is located in the CBD of Melbourne, it is convenient due to its location where the biggest train station in Melbourne is nearby with supermarket, bus station and outlet included. Although the campus is considered small, it contains professional equipment and complete school facilities like library. It also has a restaurant opened to public where students from hospitality management can be trained to provide service while serving the real customer. Unfortunately, William Angliss does not provide student dormitory, so we will have to find our own accommodation, which can be quite frustrating, but it is also a good experience of finding accommodations for ourselves. accommodations in suburb area is ideal for slow-paced living style where the rent is cheaper and rooms are bigger, but it is far from city and inconvenience regarding to shopping. Accommodations in city, however, is expensive and it would be asking too much if we want to have private space with limited budget. Melbourne is an ideal city to live in, the weather somehow may be a bit unpredictable, it can be sunny a minute ago and start raining cats and dogs after you finished shopping. The autumn in Melbourne, however, is not a pleasant experience when it could be warm today and suddenly become freezing cold on the next day. Melbourne is also famous for accepting refugees and taking care of them. This is the reason we can see a lot of refugees and homeless people on the street. The food is safe, no epidemics and extremely friendly to animals. (260字)

When I was taking a course conducted by Ivy Lao Shi in TKUL, I thought the assignment was already tough to do, however, I was naive to even have that thought in my mind. After my studies in Australia, I realized what Ivy said about Taiwanese university students have easy assignments is true. The class is understandable due to the fact that students from LangYang Campus accept lessons conducted in English, what is really challenging is the assignments and projects given by the sister university. In my case, I was enrolled to four classes in my previous semester, each class have four assessments to finish throughout the 12-week semester, meaning in every three weeks we will need to complete four assessments with academic standards and APA referencing style. The reference is the part I considered the most difficult one. Not only we have to cite correctly, but to find a relevant source to apply to your topic. This can be time consuming because a massive amount of reading will be needed for just only referencing a sentence you mentioned in your essay, and 1200 words of paraphrasing is just the minimum amount of words for your work. It can only be overcame by practice and understand what the professors really want in the assignment. It is not a big problem to deal with racism in Melbourne, because Melbourne is the city filled with all different cultures, and Australian people have a high tolerance toward foreigners. However, it still can be quite challenging when working in an English-speaking country, not only the accent or word of choosing may confuse you, but the Australian slang and humor are also difficult to pick up if you are not born in Australia. (五)大三出國建議

It is very important to get along with the classmates who are going to the same place as you do, it is always better to have an accompany at your side. Be careful the roommate you have, to avoid any unnecessary problems and conflicts, do find a roommate you trust, and you can rely on. It is best to get your friend to live with you and do everything together at the first few months of study abroad program, or at least stay together until the 1st semester is over, you and your friends might be separated for the sake of finding jobs, but keep in touch. William Angliss is a professional educator in terms of hospitality, it is important that you know what is best for your career and what you really what to do in the future before you choose to study here. If you know serving people and provide hospitality service is what you want, William Angliss is very ideal place for your study abroad program. Although it is a TAFE (Technical and further education), it provides excellent academic education for hospitality knowledge. For working, it is not easy to save up money even if you are rostered 30 hours of work per week, your rent and bill can almost take all of your income, try to cook for yourself instead of dining out, it is expensive and small portioned. If you are looking to save money for traveling, do some searching online to avoid any additional costs. (250字)
