(一)基本資料

William Angliss Institute of TAFE is a TAFE institute located in the Melbourne CBD, Victoria, Australia providing a specialist centre for training and vocational education in Hospitality, Tourism and Culinary Arts. It is the oldest and largest provider of hospitality training in Victoria, with the capacity to train up to 1400 chefs and patissiers a year.(55字)

(二)課程學習

My favorite course in William Angliss Institute was Food and Beverage operation, both tutoring course and operating course were interesting and useful. Every week, we learned theoretical knowledge in the tutoring course. For example, the topic would be like which is the best wine to serve to customers when they are having steak, how exactly wine be produced, and the resources of different kinds of coffee bean, and etc. As for in the operating course, all of the students became a team to serve different group of guests every week. There were roughly 15 students in my class. We were from different countries, so there was some hard time on communication among us at first. Gladly after a few weeks, we became more and more familiar so we could work with each other better. Our tutor was Kylie Sweetman, besides being a tutor in William Angliss Institute, she also worked in the industry. Therefore, she trained us quite strictly as if we were actually staffs of the venue. There was one time that impressed me the most was that at the beginning of the semester, we were told that the former prime minister of Australia would be our guest next week. We were very nervous but I remembered Kylie told us, “he is just a human-being, nothing special.” Kylie always knew how to calm us down and gave us the support we need, and eventually lead us finish our missions successfully. I was very grateful for her for always got our back and giving us confidence. We needed to complete a reflection after the operating course every week, it gave us the chance to 審視ourselves where we can do better next time. The operating course was really helpful. It was exactly liked working in the event. We had opportunity to practice how to make cocktail and mocktail, how to make good coffee, how to serve wine properly. I really learned a lot during the course.(324字)

(三)生活環境

Melbourne is considered as the top 10 cities in the world that is a nice place for human being to live. To me, it is a little over-rated. The weather in Melbourne was described as like a woman by our teacher, it is quite unpredictable and I don’t like it. As for the accommodation, my friend and I stayed in a share apartment. There were plenty of people stay in the little place, but we love our little apartment. We are very lucky that all of our flatmates are very kind to each other. We always had a great time when we hanging out with them. Our apartment was located in the Melbourne CBD, so does William Angliss Institute. It only took us 15 minutes to walk to the campus from our home. There are plenty of restaurants and shopping center in the CBD. It was very convenience for us to get anything we needed. I personally highly recommend you stay in the CBD. Because the transportation fee in Australia is incredibly high for a Taiwanese. But the good news is that the tram run in the CBD is free. So as to, it will not only reduce the time you need to spend on commute but also reduce the expense on transportation. Fiztroy was my personal favorite place to go when I was free. There are plenty of café there and an art market will be hold every Sunday. I think that is a good place if you want to explore the culture of Melbourne. (255字)

(四)自我成長

Honestly to me, I did not really encounter difficulties in daily life. Maybe it was because that I already got used to stay in the accommodation of Lanyang Campus. I was already equipped with the living skills. My issue was more about my internship. I did not really get along well with one of my colleague. It is absolutely a big subject for people who work in a restaurant. It does not matter whether I like my colleagues or not, I have to learn how to work with them when I work at the restaurant. The high-quality services and food of a restaurant will require the common effort of both FOH and BOH workers. As a result, trying to find a way to get along with the colleagues; learning to cooperate and coordinate with people from all kinds of different backgrounds; trying to find the best solution when an argument occurs and developing a strong relationship with the team workers. These are definitely the key goals I always want to achieve when working in a restaurant. When customers start to ask where their food, guests put pressure on waiters, and FOH staffs will pass the pressure on to BOH staffs. When the pressure on BOH staffs is accumulated to a certain extent, the communication between FOH and BOH staffs might become in a rude manner and conflicts happen. Although I still have no idea about how to deal with this kind of situation, I always express my gratitude sincerely for the effort of my BOH colleagues have made. I think it is quite important to take any of others’ effort for granted.

(五)大三出國建議

First of all, William Angliss Institute is no doubt doing well on their teaching. I suggest you work hard on the classes. You will learn a lot after one semester. Finish your assignment in time then you get more time to explore the beautiful city. There are plenty of holidays during the year, you will definitely get times to go to other cities. Then go for it, it is always good to borden your horizens. However to me, the things really matter are the memories created by my friends and I, that things count. You have to enjoy this year, we are really lucky to have the experience living abroad. However as for the internship, do not wish William Angliss Institute will give you help. It is very important that you need to work harder than you ever had been. Because we are already being foreigners for Austrlian, we definitely have to pay more effort to everything. There are a lot of people that are better than you. If they have not stop progressing, how could we? However, do not lose hope when you face difficulties. Just remember to do your best. It is not good to put too many pressure on yourselves. It not only does not help but also let you can not live in the present. There is not shortcut for success. Everyone has their own time zone, do not give up even you think you are not as good as other. Go step by step, and you will definitely achieve your goal. (256字)
