(一)基本資料

School: International college of hotel management City: Adelaide Date: 2019/07/13-2020/03/28 Course Brief: In our school, the student of TamKang University will need to take four courses, which are food and beverage service standards, delivering guests service standards, room division service standards, and culinary techniques and standards. Four different courses, but with strong connections together, all teaching the students about how to survive in the hotel industry.(66字)

(二)課程學習

To be honest, I would like to say I like all of my courses, but if I really need to pick one, I would say it's culinary techniques and standards. There are only eight lessons in this course, every four hours per class. Our lecturer is a chef who has experience in different hotel restaurants before. Every time in this class, we need to wear a formal uniform, which is the chef's whites. Although wearing the uniform takes time, but it could let us get in the situation quicker, and it's more professional and hygiene. Every lesson, we need to make a cuisine appointed by the chef. The first week is to teach us the rule of the kitchen and how to cook chicken stock correctly. The second week comes to some challenge, try yo make our own soup, creamy cauliflower and truffle soup, and cream of tomato soup. It's quite challenging, cause without any background of kitchen, it's hard to take care of both soups in such a short time. The third week, we try to make our own sauce, I never thought that making a bread sauce takes so much energy and time. Forth week, this time it's more advanced, we made poached chicken breast with hand made mushroom sauce and vanilla ice cream, which taste like paradise. The fifth week, we tried crispy goujons of whiting which french fries and tartare sauce, we use two different types of potatoes to fry fries, to understand different potatoes' characteristic. In the sixth week, we make roast beef with green beans snd red wine sauce. During seven-week, we've made massaman lamb curry, cause this cuisine is a southeast Asian cuisine, we put at least ten different spices in the pot, which I didn't like it so much, but still taste lovely. The eighth week, which is also the final week, the chef told us to make the dishes by ourselves without teaching, which is quite challenging, grilled entrecote of beef with cafe de paris butter, although the process is quite tough, each of us made it successfully. In this lesson, we could learn how to make different foods by ourselves not just theory, and after making it we could eat it, that's why this is my favorite lesson. (378字)

(三)生活環境

Most of our students need to live on the school campus, which we called RIH. In RIH, we've got not many facilities, one dining room, two pool tables, one ping-pong table, one basketball court, one outside volleyball court, and a small place to kick soccer. In RIH, four people live in a room, fortunately, I've lived with my friends which also comes from Tamkang University, so that we have known each other well, we've known each of our characteristics, and we won't have a language barrier. Near our school, we've got a lot of supermarkets, for instance, Coles, Adele, Woolworth, etc. Also, there's a movie theatre, which I spend most of the time when I was free, the cinema provides student discounts, which makes the ticket cheaper. There's a Vietnamese restaurant which is close to our school, they sell Pho', I'd never eaten that delicious noodle before, I went there for lunch and dinner frequently because it's also cheap compare to the local restaurant. Adelaide, South Australia's biggest city, the weather over there were quite cold compare to most of the city in Australia when I just went there, it was winter, although it wasn't snowing, the temperature was still killing me, I need to turn on the heater 24 hours 7 days a week, otherwise, I'm going to froze. For us, there's only one way to go to the city, which takes the bus, there are three buses that could bring us to the city, and it takes approximately 20 minutes to get there.(252字)

(四)自我成長

To be frank, it was not that easy as I thought when I was still in Taiwan. The living place was totally different, the friends were different, the foods were different, the culture was different, even the weather was opposite compare to Taiwan. In Taiwan, I hate to take public transportation, cause it makes me feel uncomfortable, so I always drive. In Australia, for us, what we could choose is to take the bus, at first, I really contradicted to take public transfer, but if I don't accept it, I can't go anywhere even to the market, so I compromised. The food is also another big difference, the taste of food at the campus is totally different compare to Taiwan, although there's a Singapore Chef which will make some Chinese food when it's the Australia one, the food that he made really disgust me, so most of the time, we will take ingredients from the kitchen, and make sandwiches by ourself instead of eating the cooked one. The way of teaching was also different due to Taiwan, over there, they like to have more activity in class, so there's a lot of discussing time during class time, not just keep saying lessons, they prefer to let students think rather throwing everything out once a time. It was not easy for me to speak out my opinion to everyone because I was quite introverted, and I need to use English to express. As time goes by, I was getting more familiar, and it's like a daily thing, it's just a piece of cake.(262字)

(五)大三出國建議

For those second-year students who want to study at International College Hotel Management, the first and the most important thing to do is to enhance English ability, no matter listening, speaking, reading, or writing, all of these elements are important to the future. From the first moment aboard in Australia, the language changes from mandarin to English, when passing customs are asking questions, English is the tool to communicate with. During class time, the lecturer always speak English, different in Taiwan, in Taiwan sometimes the professor will explain it in Chinese, but the lecturer in ICHM comes from many different countries, so they have a different accent if listening is not good enough, it will be hard to understand what are they talking. If reading is not good enough, the handouts that they give we be hard to read, and will fail the test. The writing was also quite important, there's lots of assignment needs to write, each subject got approximately three assignment to write, which is one one-thousand essay, and two two-thousand word essay, the assignment holds almost all of the score, so writing also takes the matter. After studying, we will need to go to intern for a half-year, speaking really takes a matter now, all of the colleagues and guests speak English, so speaking is the most important part. I've got one suggestion, don't bring to many clothes to Australia, just two sets of winter clothes, because winter clothes are too heavy, one heavy jacket and one light one, three sets of summer clothes will be enough, others like shampoo, toothpaste, towel, etc, just but it at Australia, and throw it when leaving. The limit of the language was always students nightmare.(285字)

(六)其他

During our weekend, my friends and I drove to Uluru to have a road trip, seven days for 5500 km, which is my best day in Australia.(26字)
