(一)基本資料

For my junior year study abroad program, I decided to attend The Emirates Academy of Hospitality Management in Dubai, United Arab Emirates. I enrolled in three courses worth a total of 15 credits: Professional and Personal Development, Food and Beverage Business, and Hotel Operations. Moreover, I selected Al Qasr as the hotel where I will complete my internship. (57字)

My favorite class is Food and Beverage because we get hands-on experience in the kitchen, cooking food ourselves and learning culinary skills and knowledge that we don’t usually encounter. This course has deepened my passion for the culinary arts and helped me understand many details that we may not usually notice in a restaurant setting. Although there are many rules in the kitchen, I believe these regulations are necessary for our safety and worth following. The kitchen environment requires a high level of discipline, not only to ensure the quality of the food but also to guarantee the safety of everyone working there. Among all the lessons, my favorite was learning how to cook steak. This class not only taught us how to prepare steaks to different levels of doneness but also how to use the leftover butter from cooking to make sauces that pair perfectly with the steak. This taught me the concept of “ingredient utilization” in cooking, and I realized that every detail of the food can become a highlight of the dish. After the class, I not only gained new knowledge but also had the chance to enjoy my own cooking. The satisfaction of tasting food I made myself is not only a pleasure for the palate but also a sense of accomplishment. In addition to practical kitchen lessons, we also learned about restaurant etiquette, bartending, and how Western restaurant servers should serve dishes. These courses gave me a broader understanding of the hospitality industry and taught me how to interact professionally with customers. One of the most memorable experiences was hosting a food truck event with my classmates. Everyone had a specific role: some greeted customers while others cooked in the truck, and we all worked together seamlessly. From this experience, I learned the importance of teamwork. Speaking of bartending, we focused on making non-alcoholic cocktails. From using shakers to decorating drinks with dried fruit, every step was done by ourselves. I learned that every action needs precision and care to create the perfect cocktail. I found it truly special to drink a beverage I made, especially when it was prepared using professional bartending equipment. Every cocktail is a creative process, and I find that experience very enjoyable. I truly enjoy all the practical courses in food and beverage; they are not only fun but also very useful!(393字)

During my studies and internship in Dubai, we all stayed in the school’s dormitory. I really liked the design of the single rooms, which included a bathroom and a kitchen, providing great privacy. During the three months of classes, breakfast and lunch were provided by the school in a buffet style, which we could enjoy at designated times in the restaurant. The school also had many facilities, such as a library, gym, and swimming pool, all of which were great for the students and teachers living there. The dormitory was located in the Jumeirah area, directly across from the Burj Al Arab, so during our Hotel Operation class, we visited several nearby hotels, including the Burj Al Arab and Jumeirah Beach Hotel. In Dubai, the main mode of transportation was taxis, as the city has few pedestrian-friendly areas and most of the roads are large highways designed for vehicles. Public transportation, like the metro and buses, is often crowded, which can extend travel time, so we mostly chose taxis. The fare was not expensive, and splitting it among us made it affordable. Living in Dubai is generally more expensive, and eating out every day can be quite costly, so I opted to buy groceries and cook my own meals. One unique aspect of life in Dubai is the prevalence of delivery services. Almost anything can be delivered, and there’s no need to go to the supermarket. The weather in Dubai is extremely hot, with temperatures reaching 40 to 50 degrees Celsius in summer, and the humid air causes you to sweat after just a few minutes outside. Because of this, every place in Dubai has air conditioning, often very strong, and even bus stops are enclosed spaces with air conditioning. The city has a very unique atmosphere. (297字)

Dubai is a country that predominantly follows Islam, is relatively conservative, and does not consume pork. When I first visited a local department store, I was greeted by the strong scent of Middle Eastern perfumes, and the people around me were dressed in traditional attire. What stood out the most was that women almost entirely covered their heads and faces. During my internship, I saw a local woman who not only wrapped her hair with a headscarf but also covered her entire face with a veil, leaving no skin visible. This cultural practice left a deep impression on me, as I found it both unique and admirable. I truly respected their dedication to tradition, especially in such scorching weather, where temperatures often exceeded 50 degrees Celsius. I consider myself highly adaptable, so I didn’t encounter major difficulties in daily life. Although I found the local cuisine a bit challenging to adjust to, I managed by cooking my own meals or occasionally ordering Chinese takeout. Additionally, I found Dubai’s advanced delivery services very convenient, as almost anything could be delivered to my door, which made life much easier in the extreme heat. However, the hardest part for me was dealing with homesickness. During my time abroad, I didn’t return to Taiwan, and it was my first time being so far away from my family and home. At times, I felt like abandoning my internship and going back home. Fortunately, I had friends in Dubai who supported me when I felt lonely, and video calls with my family gave me the encouragement to keep going. With their support, I successfully completed this challenging but rewarding year. Reflecting on the experience, I am grateful for the personal growth and the global perspective it gave me, which I believe will benefit me for years to come. (304字)

(五)大三出國建議

I believe that my junior year abroad helped me grow tremendously, and I’d like to share some advice with underclassmen preparing for this experience. Before this, I had never lived independently away from home, nor had I worked in such a large hotel. For those about to go abroad, I think adjusting your mindset is crucial. You might worry about unfamiliar environments, language barriers, or adapting to a new lifestyle, but as long as you are open to learning and trying new things, everything will gradually fall into place. During my internship, my English communication skills improved significantly, and I made friends with many people from different countries. By chatting with them, I not only gained a deeper understanding of the world but also introduced Taiwan to them. My advice is to actively engage with people from diverse cultural backgrounds. This will not only broaden your horizons but also make your internship experience more enriching. Additionally, you should work hard and demonstrate responsibility and enthusiasm in your job. During my six-month internship, I earned recognition from my supervisors and appreciation from my colleagues, and the sense of accomplishment became a strong motivation for my future. I also want to remind underclassmen to prepare mentally for potential moments of loneliness. However, this is a rare opportunity for growth. If I hadn’t chosen to go abroad, my perspective might have remained limited. So, don’t be afraid to step out of your comfort zone—this year will help you become better and gain a clearer sense of direction. (258字)

(六)其他

I am truly grateful to myself for making the decision to come to Dubai. The most valuable experience I gained from this journey was my internship. Honestly, I felt very tired when I first started working. Since it was peak season for the hotel, my colleagues didn’t have much time to guide us, so I could only try to absorb as much as I could in the fast-paced work environment. It wasn’t until one or two months later that I really started getting involved in the work and began helping my colleagues with tasks. This was also my first time working in such a large-scale organization. I remember my supervisor once told me, “You’re very capable, but if you ever need help, feel free to ask. You don’t have to do everything by yourself.” This made me realize that this is a team, and we can share the workload and collaborate. I am deeply grateful to have met such supportive colleagues and supervisors, who never overlooked my development just because I was an intern. With their help, I learned many valuable lessons that can only be gained through real work experience. I truly enjoyed the atmosphere at Al Qasr. The relationships here have grown beyond just colleagues; we’ve become supportive partners. I want to thank Tamkang University for providing me with this opportunity to live in such a special country like Dubai, and I’m also grateful to Al Qasr for accepting me as an intern. Lastly, I want to thank myself for not giving up along the way. I successfully completed this year, returning home with countless unforgettable memories and valuable experiences. (278字)
